Garlic & Sea Salt Carrot Fries

Garlic & Sea Salt Carrot Fries - This is a great snack for my vegetarian, vegan and meat eating friends.

Ingredients

  • 1 bushel of small carrots, peeled and cut into batons (8-10 carrots)
  • 3 tablespoons cup olive oil
  • 3 garlic cloves, finely chopped
  • 1 teaspoon sea salt
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon cinnamon

Instructions

  1. Preheat oven to 425 degrees. Cut off rough carrot ends and peel. Reserve 1 tablespoon of finely chopped carrot leaf tops.
  2. Mix chopped carrot tops with chopped garlic. Split portion in half.
  3. On a large baking sheet, toss carrot sticks with olive oil, half of the chopped garlic and carrot tops, sea salt, cayenne and cinnamon.
  4. Arrange carrot sticks in a single layer, rounded side down first. Roast carrots on the top shelf of the oven for 5 minutes. Then flip over to the flat side down and roast for another 5 minutes.
  5. Remove carrots from oven and toss remaining chopped garlic and carrot tops over the top. Season with additional sea salt if needed. Serve warm.

Cast Iron Brown Sugar Baked Beans

Cast Iron Brown Sugar Baked Beans - My roots are from Kansas City, I know a few things about barbeque sides and these beans are perfect solo but amazing with some barbeque!

Ingredients

  • 6 strips of crispy bacon, browned
  • 4 cans pork and beans
  • 1 medium onion, diced
  • 1 jalapeno, diced
  • ½ large bell pepper, diced
  • ½ tablespoon garlic, minced
  • ½ tablespoon garlic powder
  • 1 cup brown sugar
  • 1 tablespoon hot sauce
  • 3 tablespoons of ketchup
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup
  • salt and pepper to taste
  • optional: green onion, chopped

Instructions

  1. Preheat oven 325 degrees.
  2. On medium high heat fry bacon in cast iron skillet on stovetop until browned. Remove bacon from the skillet and place on paper towel to soak up excess grease. Reserve the bacon grease in the pan for the remaining cooking.
  3. On medium heat and add onions, garlic, bell pepper and jalapeno. Sauté for 5 minutes then stir in all the remaining ingredients and bring to a light boil for an additional 5 minutes. Remove from heat and taste. Add salt and pepper to your liking.
  4. Place cast iron skillet in middle oven rack for 90 minutes and stir every 20-30 minutes. Increase temperature to 425 degrees and bake for additional 10 minutes. Server warm and add chopped green onion (optional).

Candied Yam Casserole with Brown Sugar Streusel

I don’t want to say much because this video speaks volumes but I must assure you that this Candied Yam Casserole recipe is just as good as it looks. I remember the first time I created this recipe for our family Thanksgiving back in San Diego and mouths just dropped.

We were at my mom’s home with a handful of family members and plates were packed to the brims with all Thanksgiving regulars. Everybody dug in and did the typical “rotation of the plates,” critically tasting each dish. Turkey, check. Mac & cheese, on point. Greens, ok you did that.  Candied yam casserole … hmmm … FIYAAAAAAAAA! Immediately it was like the day of Pentecost. The Holy Ghost, in true form, fell upon the saints and they started speaking in tongues as the yams hit their palates.

Naturally I’m sitting in my seat pretending to be humble but mentally popping my collar because I knew I brought the heat.  It’s my special ingredient is what truly separates my casserole from all the other sweet potato casseroles out there.

Ginger + Yams whaaaa???

The addition of fresh grated ginger makes all the difference. Boom I said it. Whaaa???? The other day I just went to the store with my best friend to get the ginger and her first response was, “I don’t even know what that thing is.” It made me realize that everyone has heard of ginger but few people even know what it looks like in its natural form.

Yes, it is this little oddly shaped root vegetable elevates the flavor of all the other ingredients in the candied yam casserole. Additionally, the brown sugar crumble adds just enough contrast and buttery sweetness to make your tongue start hitting the quan. I would also like to add that this dish only takes 25 minutes to blow your mind. Trust me when I say you want this on you Thanksgiving menu.

  • (1) 40 oz. can + (1) 27 oz. of canned yams drained
  • ½ cup fresh squeezed orange juice
  • 2 tablespoons lemon juice
  • 1 teaspoon orange zest
  • ½ teaspoon lemon zest
  • ½ teaspoon vanilla
  • ½ teaspoon fresh ginger, grated
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • pinch of black pepper
  • pinch of salt
Brown Sugar Streusel
  • 1 cup pecans (or your favorite nuts), chopped
  • 1 stick of unsalted butter, chopped
  • ¾ cups flour
  • ¾ cups brown sugar
  • ¼ teaspoon salt
Instructions
  1. Preheat oven to 400 degrees
  2. In a large bowl, add yams (drained) and mash until smooth with light chunks. Stir in orange juice, lemon juice, lemon zest, orange zest, black pepper, salt, vanilla, ginger.
  3. In a separate bowl add pecans, flour, salt and brown sugar and stir until mixed. Cut chilled butter into pieces and add it to the dry bowl of dry ingredients. With you hands work the butter into the dry ingredients until large, moist clumps begin to form.
  4. In a greased casserole dish pour yam mixture and spread evenly. Sprinkle brown sugar crumble over top. Bake for 15-20 minutes until bubbly and golden brown.

Smoked Salmon Mediterranean Salad

This Whole30 Challenge has really gotten me into a salad mood. I’ve been making salads for breakfast, lunch and dinner #NoFlexZone. This Smoked Salmon Mediterranean Salad is one of my current faves and is layered with bright and crunchy veggies and a delicious creamy green vinaigrette.

As you can see the salad got off to a pretty rough start. I’m not sure what ratchet tv I was watching that distracted me from my duties but I ended up burning the first round of potatoes in the oven. LOL

Potatoes in a salad? Yes indeed. My friend Courtney asked the same question when we shared this dish. But after his first bite his question shifted to why more potatoes aren’t featured in green leaf salads? My sentiments exactly. Needless to say it tastes good, real good.

TIP: Make sure you use fresh green beans and blanch them in salt water. Blanching allows the green beans to remain crisp and maintain the bright color.

This is a salad of the people. The recipe serves as a beautiful side dish when hosting guests but can easily double duty as your own light and healthy meal. Get the recipe and give it a try.
