Green Chicken Tortilla Soup

Green Chicken Tortilla Soup - This soup takes me back to growing up in San Diego.

Ingredients

  • 3 chicken breasts or thighs
  • 10 tomatillos
  • 1 small onion, chopped
  • 6 cups of chicken broth
  • 3 jalapenos, deseeded
  • 2 garlic cloves
  • 1 ½ teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon cayenne pepper
  • 1 cup of cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon olive oil
  • 1 bay leaf
  • broken tortilla chips or tortilla strips
  • Optional toppings:
  • Tortilla chips, avocado, sour cream, fresh cilantro, jalapeno slices, red onion, shredded cheese, queso fresco, limes and sesame sticks and tapatio.

Instructions

  1. Add chicken broth to a large pot and bring to a boil. Lower temperature to a simmer and add in bay leaf and chicken and bay leaf to large pot. Once completely cooked through, approximately 20 minutes, then remove the chicken from the pot and let it cool. When the chicken is cool enough to handle use a fork to shred the meat. Remember to remove the bay leaf.
  2. While the chicken cooks, heat olive oil in a separate saucepan on medium heat. Add in tomatillos, onion, garlic, jalapenos, cilantro, cumin, chili powder, cayenne, salt and pepper and cook down for approximately 10-12 minutes. Tomatillos should be blistered and soft to the touch. Add tomatillo mixture to the food processor and blitz until smooth.
  3. Stir in tomatillo mix and shredded chicken back into the pot of broth. Add in lime juice, worcestershire sauce and honey and stir and let simmer. Taste and add any additional salt and pepper to your liking.
  4. Ladle soup into bowls, top with tortilla chips to taste, optionally garnish with your preferred toppings; serve immediately.

Notes

Note: My toppings included tortilla chips, avocado, cilantro, red onion, queso fresco, and I also tossed sesame sticks and tapatio hot sauce together.

Vegan Curry Butternut Squash Soup

IT’S NEW RECIPE VIDEO TIME!!! Checkout the video above but in the meantime I need to discuss a very serious issue plaguing greedy people all over the world. Have you heard of the meat sweats? If you haven’t don‘t worry I hadn’t heard about them until this year. The most scientific definition I could come up with is the grossly uncomfortable condition you encounter after eating large portions of meat. I think it happens during the digestive process but apparently your body starts to warm up while trying to breakdown the piles of meat you just overhauled causing you to sweat profusely.  This can’t be good people!

For most of my life I have been pretty light meat eater, leaning heavier on fish and chicken. As a matter of fact I was pescetarian for three year eating only fish and vegetables. It wasn’t until I moved to Minneapolis land of the meat raffles (I’ll have to explain this mid-western phenomenon on a later blog post) that I started consuming beef and pork again.

All that to say I feel like I have been OD’ing on meat lately and I can feel it. It is not bueno waking up in the middle of the night in a pile of sweat thinking you internal organs are set on broiler mode. All I know is I need to clean up shop. Jesus be a lemonade cleanse.

So this week I decided I would incorporate more vegan and vegetarian recipes into the fold. This Vegan Curry Butternut Squash is one of my favorites so far. I absolutely love butternut squash; soups, salads, roasted, grilled #YouNameIt. It has a nutty sweet flavor that goes well with warm spices.

So for this recipe I decided to deck out my soup with some traditional thai flavors from the red curry paste, coconut milk and turmeric which all pack a punch but compliment each other perfectly. The soup comes together in less than 45 minutes but from the flavor you would think that its been simmering all day. Give this new fall favorite a try and tell me what you think.

Creamy butternut squash soup with deliciously spicy curry flavors and warm spiced pumpkin seeds. An incredibly simple appetizer that is sure to please any crowd.

Ingredients
  • 1 tablespoon coconut oil
  • 1 medium white onion chopped
  • 3 cloves of garlic chopped
  • ¼ teaspoon turmeric
  • ½ teaspoon ground coriander
  • 2 tablespoons red curry paste
  • 2lb butternut squash, 5½ cups peeled and chopped
  • 2 cups vegetable broth
  • 1 (14 oz.) can whole coconut milk
  • 1 teaspoon cinnamon
  • 5 teaspoons raw turbinado sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 2 tablespoons fresh lime juice
Spiced Pumpkin Seeds
  • ½ cup pumpkin seeds
  • ½ teaspoon maple syrup
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon ground coriander
  • ¼ teaspoon cinnamon
  • ¼ teaspoon kosher salt
  • ¼ c cup green onion
Instructions
  1. Heat coconut oil in a large heavy pot or Dutch oven over medium heat. Once dissolved add in onion, garlic, turmeric, coriander, curry paste and cook for 5 minutes. Add in butternut squash, vegetable broth and coconut milk and bring the mixture to a boil.
  2. Reduce heat to a light simmer and add in cinnamon, sugar, black pepper, salt and lime juice and let cook for approximately 15 to 20 minutes or until squash is soft.
  3. While the soup simmers make the spiced pumpkin seeds by mixing seeds, maple syrup, red pepper flakes, coriander, cinnamon and kosher salt in a small bowl. Once seeds are well-coated fold in green onion and set aside.
  4. When the squash is soft transfer the mixture to a blender and blend until smooth. Blend in batches if necessary but don’t fill the mixture to the top to avoid an excessively hot eruption. Once blended, spoon soup into a large bowl, top with spiced pumpkin seeds and sprinkle atop extra lime juice (optional). Serve warm.

Over the last two weeks I have been traveling like crazy. Minneapolis to Dallas to Austin to Raleigh to Atlanta and back to Dallas. Its been a whirlwind but the one thing that has kept me at peace is this new Solange album SEAT AT THE TABLE. This album makes my heart rejoice. I have literally had Cranes in the Sky on repeat every morning (at least 5x a day) since I got the album. It is like my soul’s anthem. I show all the way up for every single song and every single interlude. MEIKO MOVES TO DALLAS

Let me rewind just a few seconds to discuss how that trip I just mentioned ended with me in Dallas instead of Minneapolis. That’s right, ya girl is a TEXAN. I finally took the leap and move out of the twin cities. Minneapolis has been an amazing place for growth and development. I am beyond grateful for what I learned about myself while living there and the amazing friendships that came out of it. Nevertheless, I felt it was time for a fresh start, new surroundings and new opportunities, which are opening up for me here in Dallas. I will discuss more about the move in my weekend video update so stay tuned.

FEELING MINTY FRESH + GIVEAWAY

Speaking of it being TIME for a fresh start, as soon as I got to my new city I received this cool watch from Jord Wood Watches. Creamy Pea & Mint Soup

Creamy Pea & Mint Soup - I find myself testing my skills with leftover ingredients in the refrigerator and pantry. Here's a great fall soup

Ingredients

  • 3 1/2 cups frozen peas
  • 3 cups of chicken or vegetable broth
  • 4 large shallots
  • 3 cloves of garlic
  • 2 tablespoons fresh lemon juice
  • ½ cup loosely packed mint leaves
  • ¼ cup heavy cream
  • ½ tablespoon salt
  • ¼ teaspoon pepper

Instructions

  1. Heat olive oil in medium saucepan over medium heat. Add the shallots and garlic and cook, stirring frequently, until both are very soft, 6 to 8 minutes.
  2. Add in the chicken broth, peas, mint, lemon juice and salt and pepper. Bring to a boil then reduce the heat to medium low, and simmer for about 8 minutes or until the peas are tender. Add the soup and heavy cream to a blender and puree until smooth and taste. Season with additional salt and pepper if needed.
  3. Serve warm.
